Quick-to-prepare French crêpe recipe

Classic French crepes are very thin pancakes that are fun and easy to make. A truly versatile snack, eat them rolled up or folded with your favorite filling – they taste great savoury or sweet! You can enjoy them all day long as an aperitif, a main course, or as dessert!

This specialty from Brittany was created in the 13th century and has since conquered the rest of France.
Traditionally, the batter is made from wheat flour, then cooked on a hot crêpe-pan or in a crêpe-griddle and eaten immediately with sweet toppings such as chocolate sauce, jam or sugar!

For those who prefer more savory flavors, try the galette made with buckwheat flour. This type of pancake has a more pronounced taste, and become deliciously brown and crisp when cooked!

Here’s what you need for 30 crepes:

  • 5 fresh eggs
  • 300 grams of flour
  • 1 liter of milk

For an authentic touch, you can add ½ liter of beer (very common in France). It makes the crepes lighter, thinner and less dry!

In a salad bowl,

  1. first make a base with half the flour then add the eggs one by one.
  2. Next, whisk in a little milk then flour and milk again and so on.

For those who want to try the with beer, add it at this stage. Let stand 1 hour, and voila! your dough is ready.

What should you drink with crêpes?
Crêpes are traditionally served with cider, a sparkling fruit alcohol. Made from fermented apple juice, cider is particularly well associated with all kinds of crêpes, whether sweet or salty.
