1050 g Sugar

450 g Glucose

700 g Water

1 kg Salted Butter

950 g Cream

450 g Ivoire White Chocolate

Method of Work:

  1. In a pot make dark caramel
  2. Whisk in warmed cream and add slowly the salted butter
  3. Hand blend the white chocolate
