La Pomme D’Amour : A So Chic Recipe

This Valentine’s Day, swap flowers for something sweeter. The pomme d’amour is the ultimate nostalgic treat to share with your favourite person.

  • 6 apples (preferably Granny Smith or Gala)
  • 300 g (1½ cups) granulated sugar
  • 100 ml (⅓ cup) water
  • 1 tbsp lemon juice
  • A few drops of red food colouring
  • 6 wooden sticks or skewers

Total time: 30 minutes

Preparation: 10 minutes

Cooking: 20 minutes

  1. Wash and thoroughly dry the apples. Insert a wooden stick into each apple through the stem.
  2. Line a tray with baking paper or lightly oil a silicone mat.
  3. In a saucepan, combine the sugar, water and lemon juice.
  4. Heat over medium heat without stirring, until the sugar dissolves and the mixture starts to boil.
  5. Let it cook until the syrup reaches a thick, glossy caramel (around 150°C / 300°F if using a thermometer).
  6. Add a few drops of red food colouring and gently swirl the pan to mix.
  7. Remove from heat. Carefully tilt the pan and dip each apple into the caramel, rotating to coat evenly.
  8. Let the excess drip off, then place the apples on the prepared tray.
  9. Allow to cool completely at room temperature until the coating hardens.

For an extra gourmet touch, sprinkle crushed nuts, coconut flakes or edible gold dust over the caramel before it sets.
