Dine & Wine at Moutarde Singapore: An Exclusive Evening with Chef Paul Pairet and Sommelier Xavier Thuizat

There are dinners that feed you. And then there are evenings that stay with you long after the last glass is poured. The Dine & Wine soirée at Moutarde, chef Paul Pairet’s restaurant at Resorts World Sentosa, was undeniably the latter.

So Chic was invited to this intimate, one-night-only event that brought together two of France’s most compelling culinary figures: Paul Pairet, the Perpignan-born chef who has built a quietly legendary career across continents, and Xavier Thuizat, award-winning sommelier flown in from France for the occasion. The premise was simple and ambitious in equal measure, a journey through Paul’s most iconic dishes, each paired with a glass chosen by Xavier himself.

The evening opened with a cider from Maison Otium, a Pectine apple blend from Perpignan, Paul’s hometown. A personal touch that immediately set the tone. Paul then seasoned oysters and grilled sausages live in front of the guests, with the ease of someone who genuinely enjoys feeding people. Relaxed, convivial, and a very good sign of what was to come.

Before the dinner began, Xavier introduced two expressions of Dom Pérignon Plénitude, a Chardonnay and a Pinot Noir from Hautvillers, Champagne, served alongside a tuna mousse amuse-bouche. He walked us through each glass with the clarity of someone who knows exactly why every choice was made. A clean, elegant transition into the meal.

Each course carried a year and a city, a quiet reminder that behind every dish is a story.

Delicate and oceanic, with sea urchin, seaweed and lime, paired with an Aramasa Junmai Daiginjo “Color Earth” sake from Akita, Japan. An unexpected but very convincing combination that set the bar high for the rest of the evening.

Rich and smoky, with vineyard smoke and américaine soup bread. Served alongside a Domaine de Montille Meursault 1er Cru Genevrières “Hospices de Beaune” 2017 from Burgundy, a classic pairing, executed with precision.

The only dish on the menu created here, for this restaurant. XXL asparagus, ceps and a bold Tannat from Plaimont, Saint Mont, Gascogne. Generous and well-executed, a strong statement from a restaurant that is clearly finding its voice.

A dessert served in multiple textures, sorbet, curd, candied whole lemon, vanilla chantilly and sablé, paired with a Mas Amiel Muscat de Rivesaltes 2025 from Roussillon. Light, bright and a very elegant way to close the meal.

Throughout the evening, Paul and Xavier guided the room through each course and each pairing, no pretension, just genuine enthusiasm for what was on the table. The kind of dinner that reminds you that French hospitality is as much about how you’re made to feel as what you’re served.

Moutarde is one of the more interesting French addresses in Singapore right now, built around whole-piece cooking, live carvery and a thoughtful wine programme. Worth a visit well beyond a special event.
