Almond Tuiles by Yannick Dubisson

Ingredients:

– White from 2 eggs (or 60 grams)
– 125 grams of sugar
– 125 grams of almond flakes
– 25 grams of all purpose flour
– 25 grams of butter

Instructions:

Step 1: In a bowl, mix together the egg white and sugar using a spatula.
Step 2: Add the sliced almonds and flour to the bowl, and mix well.
Step 3: Melt the butter in the microwave, then add it to the mixture and stir until combined.
Step 4: Scoop small portions of the mixture with a teaspoon and place them onto a baking tray lined with parchment paper.
Step 5: Dip a fork in cold water. Use it to press down and spread each portion thinly on the tray.
Step 6: Bake in a preheated oven at 180°C for 7–8 minutes, or until golden brown.
Step 7: While still hot, remove the tuiles from the tray and immediately drape them over a rolling pin to create a curved shape.
Step 8: Leave to cool completely, then store in an airtight container at room temperature.
