On departure from Singapore, Michelin-starred chef Julien Royer signs new exceptional dishes in Air France’s La Première and Business cabins. Crowned one of Asia’s top restaurants in Asia’s 50 Best restaurants with modern French restaurant Odette, Chef Julien will now see his dishes up in the air with Air France for another whole year.
So Chic headed down to taste a few of these exclusively created dishes, and oh la la, it is très très bon.

Named in tribute to Royer’s grandmother who believed that the fundamental pleasures of a meal should be delivered in a thoughtful and hospitable manner, Odette, French in DNA yet infused with Asian sensibilities, heralds a new age in fine dining.
LA PREMIERE
In La Première cabin, composed of four private suites, highlights include Rosemary Confit Cod (Sept & Oct 2023/ March & April 2024), and King Prawn ‘Dumpling’, Wok of Vegetables, Shimeji, Kabocha Veloute ‘Retour d’Asie’ (July & Aug 2023/ Jan & Feb 2024). We tried both these dishes and it was an absolute delight.
With the cod, the combination of land and sea makes you want to travel right away to the Basque Country. The cod melts in your mouth and reveals the subtle taste of the white fish. The chorizo brings a salty touch and the “Piquillo” a hint of spice. The beans are delicious and their crunchy texture a pleasure.
