Chef Mickael Cornac, from Les Bouchons, presents his recipe of French Onion Soup.

Ingredients:

  • 1kg of Brown Onions
  • 800ml of Chicken Stock (equivalent of 1 ½ chicken cube)
  • 2 grams of Crushed Black Pepper
  • 20 grams of Emmental cheese
  • 3 pcs of Croutons bread
  • 2 grams of fresh Rosemary
  • 2 grams of fresh Thyme
  • 4 tablespoon of Olive Oil
  • 15 gram of butter (around 1/3 teaspoon)

Instructions:

  1. Peel and slice the brown onions thinly
  2. Heat up olive oil and butter together inside a large pot, once hot, add all the sliced onions in and cook it slowly over a low flame.
  3. The sliced onions should be cooked for around 45 to 50 minutes until it is well caramelized and do stir it often to avoid the onions getting burnt
  4. Chop the thyme and rosemary finely and add it to the sliced onions together with 2 grams of black pepper, continue stirring – from 1 kg of onions you should get around 100 grams of onions at the end
  5. Once your onions are browned and well cooked, add the chicken stock and stir it to deglaze the caramelization in the pot.
  6. Turn up the heat and when the soup starts to boil, reduce it to a low flame and continue cooking for another 10 minutes
  7. Topping for the French Onion Soup: Put the Emmental cheese on top of 3 croutons bread previously toasted and bake it in the oven until the cheese melts
  8. Serve your French Onion Soup inside a bowl and add on the 3 croutons with cheese on top!
